Last night for dinner I made a vegetarian dish from my Cooking Light magazine. What you see above are spiced lentils with a poached egg and garnished with Fage´ and Sirarcha. I really loved this meal and from all appearances so did Devin.
I'm still working on my poached egg technique...I could cheat and buy those poaching cups, but where's the fun in that? Also, I used brown instead of red lentils. I can't seem to find the red ones.

Also, speaking of easy dinners, we have a new favorite white chicken chili! I was a little skeptical of this recipe because it was so simple. But my skepticism was in vain! It's safe to say we'll be having this at least a couple times a month this Fall/Winter and I also decided it'll be my new standard "take to people" meal. In fact, I'm taking it to a friend of ours this week who just had a baby.

Oh, and I added corn to the recipe. I would recommend that.

I really like these foodie posts. I don't get cooking magazines...so the pressure's on your creative blogging to keep me inspired. ;) Also...I just saw red lentils at Trader Joe's. They are seasonal I think because they aren't normally out on display like that. I'm sure they taste nearly the same though.

We have red lentils comin out of our ears. And yellow, and brown, and every other type you could think of. I'll have to stick in a package next time I come and visit! :) Oh, and I have zero clue what sararcha is???
I've gotten my red lentils at Meijer in FW.
