Eating well.

This past weekend was really great. I think it could be categorized by great food and downtime. The downtime was much needed and the food was just a bonus. Interested in our food? Good, because I'm going to tell you about it...

Friday night Devin's parents took us out for his birthday dinner to a place of Devin's choice. He chose a new hibachi grill in town called Koto. For various preconceived ideas, I didn't have my hopes up too high for this place. I was corrected...majorly. The spicy tuna roll was fantastic (yep-I've been eating sushi throughout my whole pregnancy-who came up with that rule anyways?) and then the hibachi meal...wow. The price was definitely reasonable for all that came with the meal...soup, salad, shrimp appetizer (best shrimp I've had), and vegetables/rice/meat. I ordered the tuna steak as my choice of meat...and it did not disappoint. I could keep going...but seriously impressed with this place. We'll be back. Let us know if you'd like to go with us. :)

On to Saturday night...grilled pizza! Once again, Mel's Kitchen Cafe´is the best blog for recipes.

The grilled flavor makes the crust amazing. We had a whole wheat crust from Trader Joe's, used extra sauce, tomatoes, basil, and a sharp white cheddar. After grilling we finished it off by drizzling basil pesto.
We talked about the pizza the whole night. And we may or may not have finished the whole thing.

And finally...Sunday after church I got to meet one of Devin's very best friends who was in town visiting from CA. He brought along his wife and adorable baby Fair. We had them over for lunch and I made the following recipe, along with veggie spring rolls and spicy peanut sauce. The flavors all complemented each other rather well.
Coconut Lentil Soup

I love weekends at home!
