Red Coconut Curry Noodles


Such a great meal! I used zucchini instead of red pepper because I had some I needed to use up. And I also used a hot chili garlic sauce in place of the sweet Thai chili sauce...because we like things spicy around here. I opted for the lite coconut milk and didn't use quite the whole amount.

I recommend reading through the recipe before you start. Maybe you always do this...but my lack of attention to detail caused me to have a re-do. Luckily it was early in the game, and there's no harm in having some extra pre-cooked chicken in one's freezer, right?
